Sunday Brunch

Potato is commonly known as starchy food. However, it is nutritionally rich as one of the high potassium food with multiple vitamins and minerals. Potassium is important for fluid and electrolyte balance in the body, helpful to lower or stabilize blood pressure.

Here is a cook off for a healthy low calorie meal with potatoes.

Ingredients
Whole corn- 1
Potatoes- 400g
Parsley
Celery broth- 1.5 cup
Soy sauce- Half tbsp
Black pepper
Butter- 10g

1. Cut potatoes into bite size pieces and rinse them with water. Then cook them in boiling water for 15-20 minutes.
*Do you know: Boiling potatoes with their skins prevent loss of nutrients*

2. Cut the whole corn into half and in vertical direction, remove the core with your knife by cutting the corn downwards.

3. Put the potatoes and corn into a pot of celery broth. Season with some soy sauce and let it simmer for 10 minutes.

4. Put in the butter and let it melt. Then add in some black pepper to balance up the taste. Add some fresh parsley before serving.

*You may choose between soy sauce and butter if you would like it less seasoning. Tentatively, if you like to indulge both, do not worry about the calories as its only 200kcal per serving. This healthy yet fulfilling dish is also high in Vitamin C and B6. Enjoy 🙂
